My Superfood Oatmeal

I love having oatmeal in the mornings, especially when it’s freezing cold outside. The great thing about it is the variations it allows. All you need to do is perfect your basic recipe and then add anything you want, or top it off with your favorite garnishes and ingredients. Oatmeal really is one of the healthiest breakfasts you can have since it’s packed with fiber and will provide a slow release of energy.

Basic Oatmeal Recipe

For 1 portion you will need:

  • 1 cup (about 45-50g) oats
  • 3/4 cup water
  • 1/4 milk (I like using almond milk, but any milk will do. If you choose to leave out the milk, add another 1/4 cup of water)
  • 1/2 banana
  • 1/2 tbsp. vanilla extract
  • 1 tsp. brown sugar or honey
  1. Start by mixing together the oats, water and milk in a saucepan. The heat should be on medium heat. If it’s too hot your oats might burn.
  2. Add the banana (I like mashing my banana slightly because it gives a similar consistency to my Bircher Muesli but you can also cut it into chunks and add it to the oats that way). Add the vanilla and sugar (if you use honey add it at the end)
  3. Stir occasionally. After about 5 minutes your oatmeal should have a creamy consistency.
  4. Top it off with your favorite ingredients!

 

For my Superfood Oatmeal, I included chia seeds and flax seeds. I stirred both of those ingredients in when I added the banana. Towards the end I also added 1 tbsp. of goji berries. I topped the oatmeal off with some granola, 1 tbsp. of almond butter, coconut, chia seeds and a little bit of banana. If you make oatmeal you can really be creative when it comes to the toppings. You may prefer to just add one topping or none at all. I also suggest difference spices. Cinnamon for instance makes a great addition and compliments the scent of the vanilla, plus it reminds me of Christmas!
