Zucchini Burgers


I found the recipe for the Courgette Fritters in the Autumn Issue of the BBC GoodFood Quick Suppers magazine. For 2 servings they calculated 2 medium zucchini, 2 tbsp. self-raising flour, 25g of Parmesan and 1 tbsp. of olive oil.


I modified the recipe a little:

Zucchini Burgers

  • 2 med. zucchini
  • 2 tbsp. flour
  • 30g Goat cheese
  • coconut oil
  • seasoning: salt, pepper
  1. Grate the zucchini. Combine with flour and Goat cheese.
  2. In a frying pan, heat the oil. Form 5-6 burgers. Fry for 3min on each side.

I had my burgers with a side salad, but they would taste amazing with a wholewheat burger bun or ciabatta and your choice of vegetables.
