I officially love leftovers! Especially when they include oven-roasted butternut squash. After having such a delicious meal this weekend I could not wait to have lunch yesterday. I knew exactly what I was going to have. I had painted this picture of a perfect salad topped with butternut squash in my mind and knew exactly that it would be yummy! And let me tell you, it was! It was so good that I even sent my mum I picture of the food to make her jealous.
A bed of Italian salad and kale topped with carrots, tomatoes, crumbled goat cheese and walnuts. This shows once again that a healthy meal does not need a lot of preparation and that leftovers make everything better!
