Food Inspiration of the day:
the salad I had for lunch yesterday.
Salads are great for a quick (less than 10 minutes preparation time) lunch because you can style them up with literally anything i.e. leftovers, fruit, veggies, etc. This salad included:
- mixed crunchy lettuce
- bell pepper
- small tomatoes
- broccoli florets
- apple slices (I try to eat at least one apple a day because One apple a day keeps the doctor away)
- Greek yoghurt (used as a dip for the apple)
- polenta (I had some of this leftover from the night before)
- goji berries
The salad was drizzled with walnut-pumpkin seed oil (that I brought back from Austria) and balsamic vinegar.
